What a great Thanksgiving weekend we had! It was such a heart warming feeling spending time with all of our loved ones this year. And it was yummy eating all that Turkey this weekend, and we were lucky to have leftovers.
Leftover Turkey is my favourite. You can make sandwiches or another favourite, soup! Making soup is usually my go-to because then I know the leftovers won’t go to waste. Sometimes you can really be tired of Turkey by the end of the weekend. So you can make this and freeze it if you would like.
The best part of this recipe is that it is super easy. The only ingredient you might need to go out of your way for is bone broth. You can make your own from the Turkey carcass! Or store bought is also perfect. It’s high in protein, but I find the flavour is so much stronger and delicious. It really adds body to the soup. But don’t worry, regular broth will work great!
And don’t feel like you have to us Turkey. Leftover chicken can be used in place of Turkey if you want to use this recipe all year round!
