You know what is great? A sunny morning with a hot cup of coffee and a delicious slice of Banana Bread. Honestly, nothing can make your morning better. Well maybe waking up to a clean house and children who slept in. Hey… a Mom can dream!
I’ve been making this Banana Bread for years now and it’s a recipe everyone loves. What’s great is the simple ingredients. No artificial sugars, healthy fats and it’s made with a gluten free flour.
We really try to stay away from artificial sugars because they provide no good use for your body. No healthy benefits or nutrition. This is why I chose to use Maple Syrup or Honey. Both our process by nature and each contain certain minerals and antioxidants. I prefer to use maple syrup because it adds a nice toffee flavour to whatever you bake, similar to brown sugar.
And instead of using butter, I prefer coconut oil. Coconut oil has been a craze for a few years now and that’s because it really is amazing. Filled with healthy fats that are super beneficial for your body. Coconut oil contain other properties such as anti-inflammatory. Not saying butter is horrible, so don’t get upset with me. I just prefer to use an ingredient that will be more beneficial for my body.
And the best part of this recipe is the oat flour. It definitely is not a flour that is used often enough. It makes this banana bread extra soft and crumbly, but in a good way. And you can make your own Oat Flour by simple processing oats in a food processor. It’s really is that easy. The trick with oat flour is to let your batter sit. When you first mix it in, you may notice your batter is loose. But if you let it stand for five minutes, you will notice how much the batter will thicken. It’s perfect!
